PROTEIN PANCAKES

 

– 2 eggs
– 1 cup of almond meal
– 1/2 mashed banana
– 3 tablespoons of almond milk
– pinch of cinnamon
– 3 tbsp coconut yoghurt
– small handful fresh berries
– coconut oil to cook

 

  • Beat eggs and combine with almond meal, mashed banana, almond milk and cinnamon, then add coconut oil to a hot pan. Cook on either side until golden brown. Add coconut yoghurt and fresh berries to serve.
